The Stinson manual says rudder deflection should be 18.5-19.5 degrees left or right of Center. The IPhone has a free app that works great for this. Left and right deflection for the rudder falls in the required deflection. 

Checking the tension on the trim cables. The Stinson service manual says it should be 3-7 pounds. Using a T-5 Cable tensiometer with a #1 riser it measured between 2 and 3 on both cables. Going to the chart for a T-5 that makes it about about 7. I’ll leave it there. 

A sharp observer will notice the bottom fabric is on.

Guessing 0-5 is 5-10 with a #1 riser, a 3 makes it about 7.
